Grandma Mac’s Sweet Potatoes and Apples

 

6 medium sweet potatoes or yams

1 1/2  to 2 cups thickly sliced apples

1/2 cup brown sugar

dash cinnamon

1/4 cup butter

1/2 cup apple water

 

Peel and slice sweet potatoes into ½ inch slices.  Cook until nearly done in boiling water.  Cook peeled and sliced apples, covered, until nearly done in a very little boiling water.  Be careful to not over cook potatoes or apples.  Apples will cook very quickly. 

Set the water from the apples aside.  If apples are not tart, sprinkle them with lemon juice.

Preheat oven to 350 degrees.  Grease a baking dish and place in it alternate layers of sweet potatoes and apples.  Sprinkle the layers with brown sugar and cinnamon.  Dot layers with butter.  Pour apple water over top when complete.  Bake for about 1 hour.

 

Notes:  I like to use yams and granny smith apples.  I also like using more apples, apple water and butter than the recipe calls for.  I usually use a 9” x 13” pan, but I might start using a smaller, deeper pan, so the apple water is deeper.  I don’t think it really matters what size pan you use.
