Matt’s Quick & Easy Quiche
2 cups milk
4 eggs
3/4 cup biscuit baking mix
1/4 cup butter, softened
1 cup grated Parmesan cheese
1-10 oz. package frozen chopped spinach (you can substitute fresh spinach if you want)
1 cup cooked ham
8 oz. shredded Cheddar cheese
Preheat oven to 375.
Lightly grease two 9” pie tins.
In a large bowl, beat together milk, eggs, baking mix, butter and Parmesan cheese. Batter will be lumpy. Stir in spinach, ham and Cheddar cheese. Pour into the two pie tins.
Bake for 50 minutes or until the eggs are set and the top is golden brown.
