Patsy Leer's Skillet Cornbread

 

2 Tbls. butter

1-1/3 cups corn meal

1/3 cup flour

1 tsp. soda

3 Tbls. sugar

1-1/2 tsp. salt

1 cup milk

2 eggs unbeaten

1 cup buttermilk

1 cup sweet milk

 

Preheat oven to 400 degrees. Place butter in 10-inch, heavy iron skillet.  
Place in the oven and melt the butter while mixing bread.

Mix dry ingredients. Stir in milk and eggs, then buttermilk. Pour into hot skillet.

Carefully pour second cup of milk over batter. Do not mix.

 

Bake 400 degrees for 35 minutes.
