Grandma Bonnie's Carrot Cake  

Cake
2 c. sugar
4 eggs
1 tsp. vanilla
1 c. vegetable oil
2 c. flour
2 tsp. baking powder
1-1/2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 c. grated carrots
1 c. crushed pineapple (drained and pressed)
2 c. chopped walnuts
Sift together flour, baking powder, baking soda, cinnamon and 
salt and set aside.  Cream together sugar, eggs, vanilla and vegetable 
oil.  Add flour mixture and mix really well.  Add carrots, pineapple 
and walnuts.  Mix well.  Bake at 350 for 45 minutes to 1 hour.
Frosting
8 oz. Cream cheese
1/2 c. butter (softened)
1 box powdered sugar
1 tsp. vanilla
